The other day on the on Pinterest I came across a recipe for a chopped salad that looked amazing. I had to try it ASAP and it was as amazing as it looked, so I thought I'd share with you.
Here's a pic of the goods:
Lots of yummy things - dried cranberries, pecans, pears...and bacon!
And this is what the deliciousness looks like:

I also made roast beef horseradish panini's to go with it.
They were HUGE and made good lunch leftovers.
Cranberry - Pear Chopped Salad
- 6-8 cups chopped romaine lettuce
- 1 cup dried cranberries
- 2 medium pears, chopped
- 1 cup chopped walnuts
- 5-6 oz. crumbled feta
- 8-10 slices of bacon, cooked crispy and crumbled (I cheated and used the microwave stuff to save time, but it still tasted great)
- about 3/4 cup T. Marzetti Poppy Seed dressing
- about 1/4 cup Balsamic Vinaigrette dressing
(Makes a lot - but still tastes great the next day)
